Recipe Summary Summer Vegetable Ratatouille
My favorite way to serve this ratatouille is with crepes. Very delicious. I also add a mixed green salad on the side, and some French bread with butter for a wonderful meal. It makes a large batch, but I found that it freezes really well for future use.Ingredients | Ratatouille Food Critic2 onion, sliced into thin rings3 cloves garlic, minced1 medium eggplant, cubed2 zucchini, cubed2 medium yellow squash, cubed2 green bell peppers, seeded and cubed1 yellow bell pepper, diced1 chopped red bell pepper4 roma (plum) tomatoes, chopped½ cup olive oil1 bay leaf2 tablespoons chopped fresh parsley4 sprigs fresh thymesalt and pepper to tasteDirectionsHeat 1 1/2 tablespoon of the oil in a large pot over medium-low heat.
