Double Chocolate Granola
Inspired by the starbucks double chocolate chip frappuccino, these insanely chocolaty cupcakes are flavored with just a hint of coffee, bursting with chocolate pieces, then crowned with a lusciously whipped frosting.
Recipe Summary Double Chocolate Granola
Serve with yogurt and/or milk. One serving is pretty hefty for me, but it's so low in calories, you can probably afford 2 servings at one go.Ingredients | Double Chocolate Chip Mocha Frappuccino Starbucks Recipe3 cups rolled oats1 cup chopped cashews⅓ cup shredded coconut⅓ cup chopped dried mixed fruit2 tablespoons unsalted butter3 tablespoons honey¼ cup unsweetened cocoa1 teaspoon vanilla extract1 pinch salt5 tablespoons miniature semisweet chocolate chipsDirectionsPreheat oven to 350 degrees F (175 degrees C).Mix oats, cashews, coconut, and mixed fruit together in a large bowl.Melt butter in a large saucepan over low heat. Stir honey into melted butter until smooth; add oats mixture and stir to coat. Sprinkle cocoa powder over the oats mixture; stir. Drizzle vanilla extract over the mixture; stir. Season mixture with a pinch of salt.Spread oats mixture in a single layer onto a baking sheet; toast in preheated oven, stirring once about halfway through, until crisp, about 10 minutes.Cool oats mixture to room temperature. Transfer to an airtight container, add chocolate chips, and stir.I kept the honey down to only 3 tablespoons, but 1/4 to 1/3 cup of honey would probably give you a much more decadent-tasting granola.Add more oil if you wish to have crispier granola.Info | Double Chocolate Chip Mocha Frappuccino Starbucks Recipeprep: 10 mins cook: 15 mins additional: 30 mins total: 55 mins Servings: 14 Yield: 7 cups
